Banchan are diverse side dishes such as kimchi, seasoned vegetables, honey-glazed sweet potatoes, and braised dried fish. Each meal typically features 4–12 different banchan, symbolizing harmony and thoughtfulness in Korean cuisine. Northern Vietnam – Light & Refined

Signature dishes include boiled pork with fermented shrimp paste, fried spring rolls (nem rán), crispy pan-fried pork belly, La Vong Fish Cake, squid cakes, garlic-roasted duck, and tofu with scallion oil. Central Vietnam – Bold & Spicy
